Warming sun dahl recipe
Dahl is a soul-warming Indian dish and the name comes from the Sanskrit word 'to split', as split lentils are used in the dish.
It is a lovely dish to share with others and there are many variations, but this is a simple recipe that you can adapt using your own herb and spice combinations.

medicine and still widely used today. Combining physical, psychological, and spiritual health, Ayurveda focuses on whole-body healing and states that a person’s dosha is the dynamic principle that determines their personality and health.
Auyvedic cooking uses many healing herbs and dahl is used to find balance for all dosha’s, so this is a wonderful recipe that can help you do just that.

Serves 2 (4 as a smaller side dish)
Ingredients
1 onion, chopped
1 fresh red or green chilli or dried chilli is ok to
2 cloves of garlic
1 can tomatoes,
2 fresh tomatoes chopped
1 or 2 cups 200g red split lentils, rinsed
1 tin of coconut milk save a little for later to drizzle on top
1 tsp ground turmeric
2 tsp black mustard seeds grind if you wish
2 tsp of Garam masala
1 tablespoon of fresh ginger
2 cups of liquid vegetable stock
2 handfuls of spinach roughly chopped
2 tbsp fresh coriander leaves, chopped, for serving
Juice of half lemon
Salt and pepper to taste if required
Fresh coriander leaves to sprinkle or chopped spinach
Method
1. Heat the oil in a large pan over a medium heat. Add the onion and cook gently for 5 minutes. Add the garlic, ginger and red chilli and cook for a few
minutes.
2. Add your lovely spices
3. Add the lentils, then the tomatoes, coconut milk and broth/stock, and stir to combine.
4. Cook on a medium heat for 20-30 minutes, If you have time, you can leave it a little longer on a very low heat for even more flavour (just stir often and check it doesn't burn on the bottom of the pan).
5. Taste and add more chilli if desired and salt and pepper
6. Stir in the lemon juice and spinach so it wilts.
7. Sprinkle your coriander leaves and drizzle the rest of your coconut milk or coconut yogurt.
8. Serve with with rice, naan bread or poppadoms, or a lovely fresh salad.
Optional additions and tips
You can use use coconut oil or ghee instead of oil.
You can also turn this dish into a soup - simply add 2 sweet potatoes. chopped, and a little more liquid then blend.
